❄️ A FESTIVE FEAST ❄️
Ho Ho Ho, Merry Feastmas! For Christmas 2021 we are doing a special, celebratory menu of festive edible joy. We'll be like culinary elves, dropping feasts at the doors of you beautiful people on THURSDAY 23rd DECEMBER. We know how much cooking there is to do over the festive season, so take a night off and let us feed you and your loved ones with this luxurious menu of Native classics. It can be enjoyed on the 23rd, Christmas eve, or even Christmas day if you're not planning on cooking yourself!

❄️ THE MENU ❄️
We start with a classic that Chris became lauded for whilst head chef at the Sir Charles Napier, that we now bring out only on special occasions. We'll make decadent soufflés that'll be packed with Trethowan Dairy's nutty, juicy 'Pitchfork' cheddar and bake them once in a bain-Marie, for you to re-bake the second time at home. These special soufflés will sit atop a rich, velvety cheddar sauce that combines both Pitchfork and Old Winchester for acidity and potency and laced with caramelised leeks, to be topped with a crunchy hazelnut crumb. A gorgeous, seemingly simple starter that will wow your guests with its beautiful texture and rich, cheesy decadence. So great with a glass of Harrow & Hope's Brut Reserve (add a bottle for £30) or Domaine Breton's stunning Chenin Blanc from Vouvray (add on for £19).
For the main.. where do we start? With the fish! We feel like we've honed our 'bake at home' fish over the last year or so, delivering supremely fresh Cornish day boat fish that arrives with a lovely cheesy crust top which protects it as it bakes and gives you a lovely moist fillet with a browned, crunchy top. Served with a 'Moules Marinieres' sauce which will consist of a lovely white wine sauce (made with Domaine Breton's Vouvray) and packed with lovingly pre-shelled mussels for decadence and indulgence par excellence, lovely with Domaine Breton's Vouvray or a glass or two of Harrow & Hope.
OR, you can opt for our Beef short rib option, where we will lovingly slow-roast local short ribs in a bath of wine & stock, before removing the bones and pressing. It will be served in a super-lux Bourguignon-style sauce made with Burgundian Pinot Noir and packed with perfectly cooked mushrooms & onions (so good with Roc Des Anges's 'Segna De Cor' Grenache/Syrah blend which you can add on for £19).
Veggies will have a stunning pithivier, packed full of mushrooms, wintery chestnuts & roasted nuts and topped with an elegant lattice pastry topping. Like the best nut roast you've ever had, and in a pie 😏.
All three will be served with a joyous tumble of sautéed potatoes & caramelised onions and greens galore.
For the pud, we are doing an indulgent take on a chocolate fondant tart. Crumbly pastry will be packed with an oozy chocolate fondant centre for you to bake in the oven. Hidden in the centre will be a dollop of of orange caramel, which our chef Laurent described as a 'bleeding heart centre'. We liked that so we rolled with it as a descriptor. Boozy, orangey masarcpone brings freshness and added indulgence and will be the perfect way to end our festive feast.

❄️ THE WINE ❄️
BRUT RESERVE NV, Harrow & Hope, Marlow - Champagne blend
We have been banging the drum of Harrow & Hope since they released their first wines nearly 5 years ago, when we persuaded them to let us sell their fizz at a pop-up we were doing down the road from them in Bourne End (when their only other client was big TK at the Hand & Flowers). It was obvious from first meeting winemaker Henry Laithwaite and tasting their wines, that they of real supreme quality and a few years down the line, they are storming both UK and international wine awards with medals for all of their sparkling wine releases and even winning GB Wine Awards' 'winery of the year' in 2019. This is their Brut Reserve NV no.6 and based on the 2017 vintage. An equal blend of 40% Pinot Noir & Chardonnay with 20% Pinot Meunier, it's full of bright apples & citrus balanced by a lovely softness. With great texture and a lovely fine and persistent fizz, it's a real treat for a festive feast. The perfect pre-cursor to the feast or to accompany the starter and fish mains in particular. Really lovely. Add on for £30.
LA DILETTANTE, Vouvray Sec 2020, Domaine Breton, Loire - Chenin Blanc
Chenin Blanc is one of our favourite white grapes to enjoy with or without food and Catherine & Pierre Breton's dry Vouvray is one of the best examples in the Loire and offers brilliant value. Aged solely in stainless, it is full of bright apples and quince, with a lovely, almost honey-esque middle from lees ageing and a wonderfully balanced acidity and long length. It's super graceful, wonderful with food - especially our cheddar soufflé starter and fish & veg mains - and is the perfect bottle to accompany our festive feast if white's your bag. Add on for £19.

ROC DES ANGES 2019, Segna de Cor, Côtes du Roussillon, France - Grenache blend
This is a beautiful, deep yet surprisingly agile red from the Southern most region in France, bordering Spain. An assemblage of Grenache, Syrah & Carignan from a dizzying variety of 40+ organic vineyard parcels growing around the limestone hills of the Agly Valley (outside of Perpignan) on black schist soils. Often on north-facing sides so the vines are naturally restrained by cooler locations, it offers plush black fruits in abundance, subtle garrigue notes, a velvety, long, finish and a lovely minerality from the Schist soils. A beautiful wine for a festive celebration and with the short rib of beef main in particular . "From the rock of the angels springs the blood (Segna) of the heart (Cor)". A boon at £19.
