Friday 21st January
It's Burns night on Tuesday 25th January, so we have taken inspiration from the hearty food of that bonnie land up there and created a right wintery feast of wholesome joy. Don't worry, haggis doesn't feature!
It's properly cold outside, so what's more appropriate than a menu of Scottish classics done with the Native spin and delivered on a Friday for you to enjoy at home?
We've got 2 wintery wines (not Scottish!) that we've chosen to go with the menu - a succulent high altitude white Rioja and a sumptuous, juicy Merlot from Bordeaux.
This week's menu is priced at £25.50 per person.
We begin with a wholesome, warming broth inspired by the classic 'cock-a-leekie', but in our ever-vegetarian-starter way, we're doing it without the cock and with more leekie & other veg friends. A clean, nourishing and deep vegetable broth is home to butter braised leeks, hunks of potato and Scottish barley to give texture & flavour and the prunes add that slight touch of chewy sweetness that the classic does so well. We've chosen Vina Ilusion's beautiful unoaked white Rioja (£15) made from high altitude vines in Rioja Baja that's full of stone fruit & citrus, with a lush rounded mouthfeel and soft acidity - a lovely match for this soupy starter.
For the main, we've chosen local estate Venison, so befitting for a Scotch-inspired feast. We love venison and here we'll slow braise the haunch along with pork fat in Merlot from Bordeaux and vegetables. Vegetarians have a just-as-indulgent mushroom version and both come with plump yet light brioche dumplings. Served with a super-smooth, luxurious purée of neeps (swede) pepped up with mustard, sweet, wintery anise roasted carrots and the usual tumble of locally grown winter greens. We've got a deep, fresh and juicy organic Merlot from Chateau Tire Pé in Bordeaux that's full of brooding plum-like wintery fruits, yet being young and unoaked, it's a juicy treat with both the meat & veg mains.
Cranachan is a classic Scottish dessert that's a bit like a boozy 'fool'. Our version features the very first rhubarb of the season, that we'll braise in blood orange syrup, tumbled together with Oxford Rye spirit (baby whisky) infused cream and Scottish heather honey toasted oats, with a bit more honey drizzled over for some wintery decadence.
ILUSION BLANCO, 2020, Vina Ilusion, Rioja Baja, Spain, 12.5%
Vina Ilusion produce just two wines from their high altitude estate in Rioja Baja subzone. They're an a-typical producer for the region, growing vines using biodynamics and making all wines on site using 'permaculture' techniques. This wine is made with white Tempranillo, a rare mutation of the red grapes and is a wonderfully clean, vibrant wine reminiscent of peachy stone fruits and crisp citrus. A soft mouthfeel make it a wonderful match for both the starter and can take on both the meat and veg mains too. Add on for £15.
Biodynamic / native yeasts / minimal fining & light filtration / no added sulphites
DIEM, 2019, Chateau Tire Pé, Bordeaux, France, 13%
100% Merlot made from organically grown grapes grown at this small family estate on the outskirts of the town of Marmande on the Garonne river. The family farm a mix of vines, fruits and walnuts, creating a diverse, biologically rich environment. Forget your classic oaky, not-ready-for-20-years Bordeaux wines, DieM sees a gentle maceration and ageing solely in stainless making it fruit forward, extremely drinkable and with a lovely lingering juiciness. It's packed full of deep plums, some wild herbs and a nice peppery kick, making it a brilliant match for this week's venison or mushroom main. Add on for £15.
